Put an egg on it

This morning I woke up too late for yoga. So much for my New Years Resolve.
Mid morning I had a small bowl of mixed grain cereal with a little milk, salt and butter. Very comforting.

We ran out to do some post holiday sale shopping - can never resist picking up one more top at Loft when it's only $10.  New coffee maker, and a few other things.

We were starving when we returned home around 4pm.  Heated up a small ramekin of last nights soup and a few of the homemade herb crackers to take the edge off.

Dinner was a recreation of the salad we had at Little Giant on Wednesday when we were in NYC for the day.  Post Boxing Day Blizzard, NYC did not have it's shit together!  The streets were a mess! We slogged our way down to the Lower East Side to eat at Kuma Inn only to find it was closed until Jan 2 so we traipsed over to Little Giant and shared a salad of roasted cauliflower and roasted mushrooms over wilted arugula with a (very over cooked) poached egg on top as well as a bowl of creamy chestnut soup which was very silky and delicious.
The salad left me craving a better version so I attempted to recreate what the chef must have intended.  My version was delicious and I am wishing I had titled this blog, "Put An Egg On It" as I think that will be my culinary trait for the time being.  There are so many dishes that can be tastefully accessorized by a fried or poached egg.

So back to dinner, I roasted the cauliflower and mushrooms after tossing them in olive oil, fresh thyme ( I love my little herb garden house plant), a squeeze of fresh lemon, salt and pepper.  Served the roasted veg over a bed of arugula which was dressed with a touch of olive oil, fig vinegar and lemon. On top of that went a bit of shaved fennel, a fried egg,  a few roasted sunflower seeds and a drizzle of pumpkin seed oil.  Accompanying on the plate were pumpkin ravioli  sauced with  fried sage, garlic, parmesan and cream.

While cooking we enjoyed the last of the holiday cocktails - me a Manhattan with those decadent dark cherries - no photo.  That will have to hold me until Happy Hour on Friday.
